About the Job

Experienced Fish Fillet Cutter:

Perform precise filleting, trimming, and deboning of seafood according to quality standards.
Maintain cleanliness, safety, and hygiene in the workplace.
Manage tools and equipment used in seafood processing.
Work in a fast‑paced environment with attention to detail and production targets.
Physical stamina for standing and manual labor.
Prior seafood processing experience is a plus.
Location: On‑site at the Mobile, AL facility.

Key Responsibilities:

Clean, fillet, and portion fish and seafood according to specified standards and client preferences.
Maintain strict adherence to food safety protocols and sanitation guidelines during all stages of preparation.
Collaborate with team members to meet daily production goals while maintaining quality standards.
Follow all health regulations and safety procedures to ensure a safe working environment.

Required Experience & Skills:

Proven experience in fish cutting, including high-volume filleting and trimming.
Strong knife skills for efficiently filleting, deboning, and portioning seafood products.
Knowledge of food safety standards and proper food handling techniques.
Prior kitchen or culinary experience is highly desirable.
Ability to work quickly and accurately in a fast-paced environment.
Excellent attention to detail and commitment to cleanliness and hygiene.
